Head Chef - £45k+ Package St Andrews - Contemporary Restaurant Superstar Head Chef required To lead a busy kitchen in St Andrews, creating and serving fresh, seasonal dishes with locally sourced ingredients. As No1, Head Chef, you will shape menus, manage costs and lead the brigade to deliver a contemporary dining experience for every diner. The Head Chef Role itself - Managing the day-to-day running of the kitchen in line with company standards. - Creating and developing seasonal menus, including costing, planning and pricing. - Controlling food costs, stock levels, storage and rotation to optimise profitability and minimise wastage. - Overseeing hygiene procedures, allergen processes and health and safety within the kitchen team. - Ensuring accurate documentation, including daily temperature checks and due diligence records. - As Head Chef, you will be leading, mentoring and developing the whole kitchen team, including performance management and upskilling. You, the Head Chef - Will come with proven experience as a Head Chef, or as a Sous Chef ready to step up into full kitchen leadership. - Strong experience in menu planning, costing and pricing. - Full understanding of EHO regulations, food safety, allergen procedures and record keeping. - Demonstrated ability to lead, develop and performance-manage a kitchen team in previous roles. - Excellent organisational and time-management skills in a high-volume, fast-paced environment. - Passion for fresh, local ingredients and creating innovative, quality dishes reflective of seasonality. - Flexibility with working hours as this is not a Mon-Fri, 9-5 office role.
