Summary
Working in partnership with Two Boats School on Ascension Island, providing young people aged 16-18 with structured work experience and development opportunities. The programme is designed to support local skills development, future employment opportunities and succession planning.
All Youth Traineeship placements are individually reviewed and approved through the Ascension Island Government safeguarding process.
Job Overview
This role is designed as a training placement to help young people develop practical skills and gain experience within a professional catering environment.
The trainee will work alongside chefs and other members of the Catering Team, receiving guidance, supervision and on-the-job training.
The placement will provide an introduction to food preparation, cooking methods, food hygiene, food safety, customer service and the day-to-day operation of a busy catering facility.
No previous catering or workplace experience is required.
Main Duties
-Assisting chefs with food preparation and basic cooking activities.
-Learning and following food hygiene, food safety and workplace health and safety procedures.
-Assisting with the preparation and serving of meals within the Combined Mess and other catering facilities.
-Learning about food storage, stock rotation and temperature control requirements.
-Supporting the completion of food safety records and legislative documentation.
-Learning how to safely use kitchen equipment and catering tools.
-Assisting with cleaning, housekeeping and maintaining high standards of kitchen hygiene.
-Learning about COSHH requirements and safe handling of cleaning products and chemicals.
-Supporting menu preparation and gaining an understanding of meal planning.
-Assisting with food presentation and developing creative catering skills.
-Working alongside chefs, catering assistants, supervisors and other members of the team.
-Taking part in training and development activities throughout the placement.

Desirable Skills - Not Essential
-An interest in food preparation, cooking or hospitality.
-GCSEs, or equivalent, in subjects such as food preparation & nutrition, hospitality, business studies or maths.
-An interest in learning how commercial kitchens operate.
-Some experience of cooking, baking or food preparation at home or school.
-An interest in customer service and providing a positive dining experience.
-An interest in progressing into a chef, catering or hospitality career in the future
