To maintain the authenticity, high quality, and continuous supply of our traditional Cantonese dim sum section, we are seeking a skilled and passionate Dim Sum Chef to join our kitchen team.

Key Responsibilities:

1. Dim Sum Preparation & Craftsmanship: Plan, prepare, and produce a wide variety of high-quality traditional and authentic dim sum items (including steamed, baked, and fried dim sum, dumplings, and buns) according to company recipes and presentation standards.

2. Buffet Supply & Production Scheduling: Calculate required quantities and schedule dim sum production batches to ensure fresh, continuous, and timely supply for peak buffet operating hours while minimizing food wastage.

3. Quality & Portion Control: Oversee the testing and inspection of incoming raw ingredients for dim sum preparation, ensuring strict adherence to taste, texture, portion sizes, and visual presentation standards.

4. Kitchen Hygiene & Food Safety (HACCP): Ensure all dim sum preparation, steamer stations, and storage areas fully comply with UK food hygiene regulations, HACCP standards, and FSA safety guidelines.

5. Inventory & Waste Management: Monitor stock levels of specialized dim sum ingredients, assist in placing ingredient orders with approved suppliers, and manage proper storage and stock rotation (FIFO).

6. Menu Development & Station Training: Assist the Head Chef in introducing seasonal dim sum items and special dishes, while training and supervising junior kitchen commis chefs in dim sum preparation techniques.
