Summary

Job Role: Junior sous-chef

Report to: Head chef & Senior Sous chef.

Responsible for: Chef De Parti, Commis chef, Kitchen porters

Summary of Position:

To assist in leading a team in ensuring the effective running of the kitchen on a day-to-day basis by implementing controls including and not limited to; staff/wage controls, effective stock management and repair and maintenance of equipment. Also to lead the team in working towards our common goal of providing a consistent service within the business; to our valued guests, which follows all guidelines and training given allowing them to have a safe and pleasant experience when visiting a Craft and Jam venue.

Responsibilities:

To assist with the leadership of an economically successful team.

shifts are financially controlled within the correct budgets for predictive level of trade and alter proactively when needed.

Stock ordering from designated suppliers using the correct necessary inventory management & correct stock wastage procedures are followed.

Ensure the maintenance & control of profit margins within the business.

To have creative input in the creation of menus & specials and ensure it is effectively producible within the volume of business for that venue and that are financially viable within the profit margins.

To assist in the productivity of daily operations of the staff & kitchen and ensure it is in keeping with the brand expectations, budgets and health & safety policies. Reacting correctly if needed using grievance & disciplinary guidelines.

To help lead a team that ensures effective communication is maintained with all relevant people within the business in the correct manner. Being precise when dealing with culinary instructions, recipes & directions to your team and ensuring all relevant weekly reports are completed.

To assist in leading the kitchen team using job chats, motivational tools & operational target settings whilst monitoring the key performance indicators within the business.

To assist in the training & upskilling of the team within the guidelines of the Craft & Jam brand for personal and professional development of the team.

To demonstrate & uphold a sound knowledge of products as well as brand awareness.

To make sound decisions that are not detrimental to the brand's integrity and follow the guidelines and procedures as set out in your house rules, contract & employee handbook.

To assist in the cultivation of a creative, professional environment that meets the desires of guests’ orders and offers a fast and consistent great quality of service. Monitoring feedback from guests as a barometer of performance & implementing the correct improvement procedures if needed.

To ensure all essential kitchen administrative duties are completed daily and in line with company standards including and not limited to; allergen information, HACCP, daily temperature logs, pest control visit reports, preparation lists, closedown checklists & deep cleaning records. As well as the correct shortage of stock using FIFO systems.

To maintain all levels of cleanliness to the correct standards, as well as meeting guidelines to achieve the highest level of environmental health scores as well as in company operational checks.

To maintain a high level of organization operationally.

To support the owners with the care and maintenance of the building by reporting any concerns, near misses or maintenance required to machinery or the premises. Which in turn will provide a safe and secure environment for staff and patrons.

To ensure the completion of all procedures which maintain the security of the business.

To positively promote the Craft and Jam ethos and ensure you live & breathe our values when working in our venues.

To conscientiously manage your time and work life balance following company guidelines as listed in the employee handbook and house rules.
