Hours: Full-time, permanent – 45 hours a week, 5 days out of 7, including evenings and weekends

About us
Smoky Boys is a growing UK BBQ and grill brand restaurants, known for Angus beef burgers, BBQ ribs, steaks and big sharing platters. Our newest restaurant, Smoky Boys BBQ & Grill Haus, opens this November at Highcross, Leicester – 128 covers, 100% halal and alcohol-free. It is run by Aki Hospitality Ltd, an official Smoky Boys franchise partner.
The role
You'll run our kitchen from day one, lead the back-of-house team and deliver the Smoky Boys menu to brand standard every service – burgers, ribs, steaks and platters cooked on a charcoal oven, griddle and Rational combi. You'll train with the Smoky Boys team and be supported by our regional chef.
What you'll do
Run all kitchen operations and deliver every dish to spec, on time
Recruit, train and lead your kitchen team
Order stock, manage suppliers and control portions and waste to hit GP targets
Keep food safety, allergen and HACCP records complete and inspection-ready
Plan kitchen rotas within the labour budget
Work closely with the General Manager so kitchen and floor run as one team
What we're looking for
At least 2 years as a Head Chef or senior Sous Chef in a busy, high-volume kitchen
Grill, BBQ or steak experience is a big plus
Strong on GP, stock and waste control
Food Safety Level 3 and solid allergen knowledge (or willing to complete Level 3 before opening)
A calm, organised leader who keeps standards high on the busiest nights
You must already have the right to work in the UK
