Summary

WE ARE MOLLIE'S

Innovatively designed by Soho House, Mollie’s is a growing family of twenty-first century motel-diners with big ambitions for expansion. In spirit, Mollie’s was born in America – an offspring of the classic roadside motel and drive-in diner, a welcome stopover on a route to somewhere. We’ve borrowed the inviting red neon signs and the easy-going vibe, the burgers, the shakes, the bottomless coffee, a dash of nostalgia, but there’s nothing old-school about Mollie’s. Expect innovative digital check-in, EV chargers, designer rooms with a fresh Soho House look and affordable prices. Mollie’s has already been named as the ‘Best Budget Hotel’ in the Sunday Times Best Places to Stay, Best Innovator in the GQ Food & Drink Awards, and was awarded the Catey Award for Best Use of Technology.

Following the success of its first sites in Oxfordshire and Bristol. Mollie's Manchester opened it's doors in late 2025. A further ten locations are already earmarked as part of the immediate expansion plan to forge a new ‘budget-luxe’ sector in the travel and leisure industry.

Mollie’s is now on the hunt for hardworking, enthusiastic Night Receptionists to join our team and build a successful career with an inventive, high growth brand at the forefront of the hospitality sector.

OUR PEOPLE

The Mollies’ team are warm, welcoming and customer focused, passionate about exceeding expectations and maintaining the highest standards of service we hold ourselves to. They are proud to work at Mollie’s and love to work collaboratively as a team to enhance the guest experience at every opportunity.

We are looking for candidates who are driven and have an eagerness to learn and build an exciting career with a fast growing, leading hospitality business.

You will be supported by state-of-the-art technology instead of legacy systems so we can create a seamless and logical way of doing things from the get-go. We want you to exceed your expectations. We will nurture your talent, encourage new skills and give you the tools to manage your future.

Mollie’s is proud to be an equal opportunity workplace that seeks to recruit, develop and retain the most talented people from a variety of backgrounds, perspectives, and skills. We therefore encourage applications from all genders, races, religions, ages and sexual orientations, as well as parents, veterans, people living with disabilities, and any other groups that could bring diverse perspectives to Mollie’s.

THE ROLE

This role brings revenue management in house and widens it. Alongside conventional pricing and inventory work, the postholder owns the rooms commercial systems and the definitions that run through them and is accountable for the periodic reporting on which commercial decisions are taken. It closes the loop between four things that are too often disconnected — commercial strategy, the systems that produce the data, the reporting that explains it, and the finance it must reconcile to — so the business runs on one set of rooms numbers.

We are looking for someone commercially driven and highly analytical, who enjoys working with data, influencing commercial decisions and building scalable revenue frameworks. Reporting to the Head of Sales and Revenue, you will own revenue performance across the Mollie’s portfolio while working closely with Marketing, Finance and the wider commercial Circle.

KEY RESPONSIBILITIES

Commercial Strategy, Pricing & Forecasting

  • Create, review and own revenue, pricing and inventory strategy by property, day of week, lead time and segment to maximise net RevPAR and overall revenue performance
  • Own the rolling demand forecast at property level, against budget, and be accountable for its accuracy; contribute rooms assumptions to budgeting and to underwriting for new sites
  • Manage distribution across direct, OTA and third-party channels, protecting rate integrity while managing the true cost of acquisition

Ownership of the Commercial Systems

  • Own the configuration of Apaleo, FLYR and STR as one connected chain — rate codes, segments, channels, room types and the rules that move data between them — not three separate tools
  • Act as commercial owner in selecting, implementing and reviewing rooms applications, and document every configuration decision so a figure’s basis survives a change of personnel

Data Integrity & Definitional Control

  • Own the definitions of occupancy, ADR, RevPAR, net RevPAR and the STR indices, applied identically across every system and the P&L, so any figure quoted anywhere can be traced to one of them
  • Reconcile the sources each period; resolve differences at source, or document them as an accepted tolerance with a stated cause. Differences are explained, not averaged

Reporting, Analysis & the Action Cycle

  • Produce periodic rooms performance reporting for each property and the estate, in time to inform trading — leading with net RevPAR and its drivers and separating a movement in performance from a movement in measurement
  • Convert analysis into agreed actions with named owners and timescales and track prior actions to closure before proposing new ones. Provide the rooms input to board and trading reporting from the same underlying numbers

Bridging Commercial & Finance

  • Be accountable for the accuracy of rooms data flowing into the P&L, reconciling the commercial rooms reporting to the rooms line each period and resolving differences upstream
  • Ensure commercial measures reconcile to the USALI rooms schedule and translate between the two teams in both directions so commercial decisions reflect their financial effect and finance reflects commercial reality

EDUCATION & EXPERIENCE

  • 2–3 years in a senior or cluster / multi-site hotel revenue role, with direct accountability for pricing, inventory and forecasting rather than executing someone else’s strategy
  • Hands-on configuration experience of a PMS and RMS — setting up rate codes, segments, channels and mappings, not just operating a system configured by others. Apaleo and FLYR highly desirable
  • Working knowledge of STR (how the indices are built, submissions and comp sets) and USALI (the rooms schedule and the treatment of no-show, cancellation, complimentary and house rooms)
  • Demonstrable experience reconciling commercial and financial reporting and resolving definitional differences between systems. Advanced Excel essential; SQL, Power BI or Tableau desirable
  • A genuine love of data and the ability to bring numbers to life to drive revenue a
  • Ability to travel to all Mollie’s sites in Bristol, Oxfordshire and Manchester is essential.nd growth. A degree in finance, hotel or business management is welcome but not essential

BENEFITS

  • Salary £55,000 per annum
  • Enhanced Company Maternity, Paternity and Adoption leave
  • Bonus scheme
  • Complimentary food on shift
  • Hospitality Rewards (Discounts Platform)
  • Celebration Day- additional day of leave after three years of service
  • Health and Dental Insurance
  • Company sick pay
  • 24 hour access to our wellness programme
  • Mollie’s Career Pathway programme including Paid qualifications
