Heritage Portfolio are looking for a talented and passionate Chef de Partie to join our culinary team at the iconic Royal Botanic Garden Edinburgh.

As Chef de Partie, you'll play a key role in maintaining exceptional standards across both preparation and service. You'll take ownership of your section, ensuring dishes are consistently delivered to the highest standard while supporting the wider team with training, food safety, stock control and kitchen organisation.
This is a varied and rewarding role that offers the opportunity to work across our retail and hospitality operations, from preparing and delivering menus for our busy cafés to supporting an exciting calendar of events and seasonal food experiences. We're looking for a skilled culinary professional with proven experience as a Chef de Partie in a high-volume fresh-food kitchen. You'll be passionate about quality ingredients, thrive under pressure, and take pride in creating exceptional food as part of a supportive and collaborative team.

What You'll Do
- Run your section (grill, larder, pastry or vegetables) during prep and service with consistency and pace.
- Maintain mise en place levels, ensuring correct labelling, stock rotation and allergen management.
- Follow production plans and recipe specifications to ensure consistency across all dishes.
- Uphold food safety, hygiene and allergen procedures (HACCP) at all times.
- Support GP and waste targets through effective preparation, portion control and communication.
- Assist with deliveries, stock counts and equipment care.
- Contribute ideas towards menu development and daily specials.
- Train and support Commis Chefs and Junior Chef de Parties while acting as a positive role model within the team.
What We're Looking For
- Proven Chef de Partie experience within a quality fresh-food kitchen.
- Strong knife skills and confidence in managing your own section.
- The ability to remain calm under pressure and effectively manage multiple priorities.
- A sound understanding of allergens, HACCP and cross-contamination controls.
- Excellent communication skills with pride in food quality, presentation and standards.
- Flexibility, reliability, punctuality and a positive, can-do attitude.
- Excellent personal hygiene and professional standards.
- Desirable: Level 2 Food Hygiene Certificate (or willingness to obtain) and knowledge of COSHH.
